Nothing looks better on the dinner table than a cooked mud crab with it's beautiful legs and large claws. And we don't know any place better than right here in Australia to enjoy a delicious local mud crab.
Mud crab meat is also wonderful in soups and bisques, or as a stuffing for seafood tortellini. Dress lightly with light vinaigrette's made with flavoured oils like walnut and cascade the flesh over a mound of curly endive with a variety of citrus fruits in a salad.
Our mud crabs – Green (S. serrata) which grow to 2.5kg with a 300mm carapace.
